What is the natural spices? I've read some articles on that labeling and I'm wondering if it's some kind of highly processed chemical additives?

"All natural spices" is descriptive of the spices listed in the ingredient statement; Salt, Red Pepper, Sage, Sugar, Black Pepper. It is not a declaration of additional "secret", "proprietary" or undisclosed ingredients.

Is there a blend no.29 and whar is the difference between it and no.10

Old Plantation does make a Blend #29 however, we do not stock it at this time. The difference is the amount of pepper and sage is less in the #29 producing a milder flavor.

I am on Atkins diet, how much sugar is in the mix, how many carbs?
Answer
There is no nutrition statement on the label but probably not enough carbs to worry about. That is, the entire bag weighs 8 ounces and will be used in 25 pounds if label recommendations are followed. Even if the entire 8 ounce bag were sugar (which obviously it is not) there would only be around 2 carbs from sugar in a 1/4 pound serving of sausage. It is my GUESS that there would be no more than 1-2 ounces of sugar in an 8 ounce bag of seasoning.

Do you have a seasoning that is Like the #10 but contains less salt. Or how would i take the salt taste out of it. I love the flavor and spice but it has to much salt in it for my taste. Thanks i love most all of your rubs and BBQ products. I use the #10 for a Rib Rub and it is great but just too salty.

Other than reducing the amount of seasoning used the options are limited. You might try adding a little sugar (white or maybe brown?) to reduce the harshness of the salt

What is the shelf life for Collagen Dried Sausage Sticks Casings if unopened and kept refrigerated?

They should keep for a couple of months with no problem. After time they may begin to mold. If you do see some mold begining to form you can still use the casing. Just cut the moldy section of casing out.

It is the nitrite that, as it breaks down prevents the development of botulinal toxin (botulism), develops cured meat flavor and color, retards development of rancidity and off-odors and off-flavors during storage, inhibits development of warmed-over flavor, and preserves flavors of spices, smoke, etc.
