This blade is made of super hard high carbon spring steel. Stainless steel is available but is a special order with a minimum of 8 blades. Special order blades are non-returnable. Carbon blades are industry standard for most meat cutting applications. SS blades may be preferred for highly corrosive environments such as saltwater fish processing.SS blades would run in the neighborhood of $20 each.
