The instructions on package say process through smokehouse. Can I use this seasoning for fresh brats as well instead of smoking?Can I use beer instead of water when mixing the meat and seasonings?

That must be a misprint on the label. Blend 104 is formulated for production of a fresh bratwurst. I looked at the packages we have in stock and the smokehouse step is absent. I personally prefer not to substitute beer for the water when mixing but I know some folks do so.
