We recommend using the largest stuffing horn that the 21 mm collagen casing slides onto. This will likely be a stuff horn with an outside diameter of about 1/2 inch.

Collagen casings are susceptible to changes in humidity. Too little and the casing dries out and becomes brittle. At this point there is not much that can be done. Too much humidity and the casing is likely to mold. The best way to store is to reseal in a plastic bag or vacuum seal if possible and hold in a climate controlled area. A dark closet in the house should be fine.
